Summertime Berry Crumble


I love this time of year when berries are in season.  Sunday we had my parents and my in-laws over for supper for Father's Day.  We had such a nice time.  For dessert I threw this simple berry crumble together and it was such a perfect dessert for summer - light and delicious. 


Begin by combining about 3 cups (or more if you desire) of fruit in a baking dish (I used a 9" pie dish... this is my every day Fiestaware, which I still love after 8 years!) with 1 Tbsp flour.   

I used fruit I already had on hand: raspberries, blackberries and sliced peaches.  What I love about this recipe though is you can use whatever fruit is in season.


In a separate mixing bowl, combine 1/4 cup of flour, 1 cup old fashioned rolled oats, 1/4 cup brown sugar, 1/4 tsp cinnamon, a pinch of salt, and 4 Tbsp unsalted butter.  You can use your hands or a pastry cutter to form a crumb mixture. 


Sprinkle the topping over the fruit mixture and bake in a 350 degree oven for about 45 minutes. 


While the crumble was baking, I quickly made some whipped cream.  I watched it closely and stopped whipping while it was still in a somewhat pourable consistency.  I didn't think to measure this while I was making it, but I usually just guess the amount of heavy whipping cream I need and then throw in a splash of vanilla and sugar at the end.  

This would also be delicious with ice cream though.


This picture makes me laugh... it's the only picture I took before we ate dessert... I peeked into the dining room to make sure nobody was looking before snapping a quick photo.  The only person who saw was my husband and he definitely gave me "the look/the head shake/the knowing grin" when I sat down.  (The look/the head shake/the knowing grin = did you really just take a picture of dessert for your blog?!) 

 Anyway, this dessert was the perfect combination of delicious and easy.  You'll love it!

  2. Any kind of fruit in a crumble is always delicious! I just got my daughter eating it, but my husband still thinks it's weird for some reason. Weirdo. And now I'm thinking about crumble and I'm hungry. I guess that means your pictures are pretty great!

  3. Yum! I love when fruit is in season, but I sure don't like the prices. Going to have to figure out my own little fruit garden. Can't get enough blueberries or strawberries for my morning cereal.

  4. I get that look all the time too! Sometimes now my husband will even point out a good blog shot for me. :)
    You must have known that I just got in from picking a bowl of raspberries from my neighbor's bush. It's growing through the fence so I've claimed half of it as mine!

  11. Well, that was a great photo, even if you only could get in one shot! And the photo of the cream in the blue and white creamer is fantastic! I have never whipped cream the way you did but I will definitely give it a try. Looks perfect over that cobbler!

  13. Local strawberries are in season right now, and every time I bite into one I am amazed at how much flavor they have (compared to the ones I buy at the grocery store the rest of the year). This looks like a great recipe--would like to figure out how to make it gluten-free. (And I know all about the picture and the knowing-grin thing, too!)

  14. Just checked back in. Love your posts. Craving cobbler now. So loved it when my husband would get peaches from his parents tree and that was our favorite one to make. Agreed. Love that drippy cream. Yum! I'm sure all the men enjoyed that yummy simple dessert. What a way to finish a wonderful FAMILY day.
